NFRDI Put out Fish-Kimchi Illustration Book

NFRDI announced it published "Fish-Kimchi Illustration Book" based on its research on Korea\'s traditional eating culture of fish-Kimchi. The picture book contains as many as 40 recipes of fish-Kimchi and fact sheets on health and nutritions of each recipe.

The fish-Kimchi was chosen in January 2009 as a strategic research target for future growth engine.

The seafood based Kimchi was found in an ancient book on women and housekeeping written in 1809. The recipe has so far been running through only a few families but not well known to the general public.

To collect scattered data on fish-Kimchi, the NFRDI scientists made visits to each of families who are keeping to date the traditional recipe of various fish-Kimchi. They also held "Fish-Kimchi Recipe Contest" to develop more various recipes. NFRDI has now registered the brand "Fish-Dimchae(ancient name of Kimchi)" for a patent.

The organization has this time published "Fish-Kimchi Illustration Book" whose detailed recipes are thought to help average consumers to easily prepare the food. The book is planned to be distributed to libraries and related research institutes across the nation.

In Korea, more and more people are consuming Kimchi with the consumption in 2010 expected to reach ￦ 1 trillion (about $ 1 billion).

Fish-Kimchi is more likely to become highly priced brand as the Kimchi is more than 20% composed of expensive seafood like abalone, whiparm octopus and skate ray.
